Food Ideas After Old Joze

People are always asking me what we serve at India Joze. I always answer "Yes".
Over the years, Jozseph Schultz has covered immense culinary territory. His favorite dishes span the world and the history of cooking. This very old list is by no means exhaustive, but are some of the popular offerings over the years. The lay-out is still a little sloppy as work to consolidate various lists continues. Call or e-mail if you have questions about the background or ingredients of dishes that interest you or dishes you think should be included in more regular rotation.

Invented in '72 at Joze, where its intensely cooling qualities made our early kitchens bearable.
A version of this drink is popular in Egypt and Sudan, where it is called "kirkadey". On a mythological sidenote, the avenging Egyptian goddess Hathor abandonned her elimination of all humans after drinking a mix of hibiscus cooler and beer thinking it was blood. Hence, our special drink "Hathor's Happiness".

Big House Red is all about fragrance, spice and soft tannins. It has a fragrance of mint and garrigue, with insinuations of blackberry and the ubiquitous framboise.
Big House White is a crisp yet round wine with a floral nose, accentuated by honeysuckle, litchi, and a bit of a tropical fruit cocktail. A virtual potpourri of fruits including cantaloupe, peach, apricot, and lychee. The finish is fairly long with a nice apricot character.

One of the oldest and most famous of the Joze dishes, profiled in the Christian Science Monitor. Tweaked if not actually invented at Joze by Nestor Marzipan in the ‘70’s. New red potatoes, organic if feasible, mushrooms, marinated artichoke hearts in honor of one of our major crops, mushrooms, green peppers, tomatoes, green onions, garlic, white pepper. Vegan if we omit the sour cream garnish.
