VEAL KIDNEY FLAMBE Alevli Dana Bobregi

1 soup spoon butter
1 tea cup fresh cream
1/2 tea cup cognac
2 veal kidneys
a dozen mushrooms, very finely sliced
a few grains crushed pepper
a finely chopped onion
salt
Cut the kidneys into slices 1/2 cm. thick and sprinkle them with the crushed pepper and salt. Fry them in butter for 3 minutes on each side. Add the onion and the cognac and set on fire. Remove the meat slices and put them on a plate.

Put the mushrooms into the frying pan and cook them for 2-3 minutes. Add the cream, stir and boil for 2 minutes. Add the kidney slices, turn them once in the sauce and serve.
