CHEESE BALLS Peynir Koftesi
1 and 1/2 coffee cups flour
1 and 1/2 glasses of grated gruyere cheese
1 egg yolk plus 3 eggs
1 glass boiling milk
1 glass of oil (olive oil if possible)
1 soup spoon butter
1/2 coffee spoon red pepper
1/2 glass bread crumbs

Melt the butter in a saucepan. While stirring, add the flour. Add the milk, mix with a whisk for 3 minutes, then remove from heat.

Away from the heat, add the cheese, the red pepper, the egg yolk. Mix. Spread the mixture about 1 centimeter thick into a mold. Two or three hours later, remove the mixture from the mold. Cut pieces 2 cm. by 2 cm. and roll them into balls. Cover with flour, then bread crumbs. Fry in oil and serve at once.
