FRIED CAULIFLOWER Karnabahar Kizartmasi

1 glass olive oil
1 good sized cauliflower
1/2 lemon
100 grams of grated cheese (kashar or gruyere)
3 eggs, salt
3 soup spoons flour

For the sauce:

1 and 1/2 coffee cups crushed hazelnuts or pinenuts
2 cloves crushed garlic
2 pieces white bread (without the crust)
some salt
the juice of 1 lemon

Cook the cauliflower in boiling water and drain. Soak in cold water to which salt, the juice of half a lemon, and a piece of bread have been added. Drain again. Detach the sprigs of cauliflower. Mix the eggs with the grated cheese. Dip the cauliflower sprigs into this mixture and fry in oil.

Place on a serving dish and cover with the sauce "Tarator." See following recipe.

To prepare the "Tarator" sauce:

Soak the bread in water, then squeeze between the palms of the hands. Carefully mix the crushed nuts, lemon juice, a little salt, and the crushed garlic with the bread. The mixture should be very smooth and well blended. Then serve.
